Cauliflower Curry
This is the perfect meal when you need something flavorful and comforting on the table fast. Divide between two people and you’ve got an entrée with 20 grams of protein (each) on your hands! It’s tasty straight up as soup, over grains as a curry bowl, or over greens for more of a salad vibe. You can’t go wrong!

Ingredients

  • 500g cauliflower, cut into small florets.
  • 2 small green chillies, chopped.
  • 1 sprig curry leaves.
  • 1 tsp salt.
  • 1 tsp ground turmeric.
  • 1/2 tsp ground coriander, ground cumin, toasted fennel seeds, red chilli powder and shrimp paste.
  • 1/2 cinnamon stick.
  • 1 tbs ghee.
  • 1 onion, roughly chopped.
  • 300ml coconut milk.

Instructions

  1. To make curry, combine cauliflower, chilli, curry leaves, spices and shrimp paste in a bowl.
  2. Heat ghee in a frying pan over medium heat.
  3. Add onion and cook, stirring, for 8 minutes or until golden.
  4. Stir in cauliflower mixture and cook, stirring, for 1 minute.
  5. Stir in coconut milk and simmer for 15 minutes or until cauliflower is tender.
